Dandelion (Taraxacum officianale) flowers are useful for pollinators in early spring and develop into these spherical seedheads or clocks. Each seed or achene is attached to a parachute of fine hairs which enable wind dispersal over long distances.

Dandelions are a popular salad green in Europe and Asia.  They can be sautéed with garlic, chives, lemon and olive oil to soften the bitter chicory notes.  The leaves are rich in vitamins A, C and K.
